The recipe is below.<\/p>\n<p><strong>Pink Guava Catharina Sour<\/strong><\/p>\n<p>6.00%<br \/>\nOG 1.052 (before fruit addition)<br \/>\nFG 1.008<br \/>\nIBU 0<\/p>\n<p><strong>Fermentables<\/strong><\/p>\n<p>50% Simpsons Pilsner Malt<br \/>\n50% Simpsons Wheat Malt<br \/>\n2kg Pink Guava Puree (in Fermenter)<\/p>\n<p><strong>Hops<\/strong><\/p>\n<p>20g Magnum Dry Hop 7 Days<\/p>\n<p><strong>Boil Additions<\/strong><\/p>\n<p>0.5 Protofloc Tablets @10mins<\/p>\n<p><strong>Yeast<\/strong><\/p>\n<p>White Labs WLP090 San Diego Super Yeast<br \/>\n6no. Swansons L.Plantarum Tablets, crushed and added to warm water.<\/p>\n<p><strong>Water Profile<\/strong><\/p>\n<p>Ca 65, Mg 8, Na 50, CL 96, SO4 15<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>This is a fermenter soured beer. Other souring methods should work too!<\/p>\n<p>Mash at 67C for 90 mins<\/p>\n<p>Boil for 60 mins. Do <strong>NOT\u00a0<\/strong>add any hops to the wort<\/p>\n<p>Co-pitch the Yeast and L.Plantarum tablets into the fermenter.<\/p>\n<p>Ferment at 20C<\/p>\n<p>Monitor the pH until it reaches circa 4.00 or your preferred level of sourness. This should take around 7-10 days &#8211; you can add more tablets or up the temperature by a few degrees if it seems to have stalled.<\/p>\n<p>Once the desired pH is reached, dry hop to kill off the L.Plantarum and stop further souring.
